Apple export grades get quoted constantly in sourcing conversations, but the actual criteria behind Grade A, B, and C aren't always spelled out. Here's what actually separates the grades, so a quote can be evaluated against what's actually being delivered — not just a letter.
What grading is actually measuring
Grading sorts apples of the same variety by a combination of physical characteristics, not by ripeness or flavor alone. The main factors are size (diameter), color uniformity, firmness, and the presence or absence of surface defects — bruising, russeting, pest marks, or shape irregularities. Sugar content (measured as Brix) is sometimes used as an additional quality indicator, particularly for markets that specify a minimum sweetness level.
What each grade generally represents
- Grade A (premium export): uniform color for the variety, minimal to no visible surface defects, and diameter within the size range that market typically specifies for premium fruit. This is the grade most commonly targeted for higher-value export markets with strict cosmetic expectations.
- Grade B: acceptable but with some visible color variation or minor surface imperfections that don't affect eating quality or shelf life, just cosmetic uniformity. Often suitable for markets that prioritize price and volume over cosmetic perfection.
- Grade C: apples that don't meet export cosmetic standards but are still sound — typically directed to domestic markets or processing (juice, sauce) rather than export.
These category definitions are broadly consistent across exporting countries, though the exact numeric thresholds (precise size ranges, defect tolerance percentages) can vary by destination market and buyer specification — which is exactly why it's worth asking a supplier for their specific grading criteria rather than assuming "Grade A" means an identical thing everywhere.
How sorting is actually done
Modern packing facilities increasingly use optical sorting equipment — sensors that scan each piece of fruit for size, color, and surface defects far faster and more consistently than manual sorting alone. This doesn't replace human quality oversight, but it does make grading more consistent across a large volume than sorting by eye alone would allow.
Why the grade alone isn't the whole picture
A grade describes cosmetic and size characteristics at the point of sorting — it doesn't by itself guarantee how the fruit will hold up over a multi-week shipping and distribution timeline. That's a function of harvest timing, post-harvest handling, and cold-chain management as much as the initial grade. A Grade A apple that's mishandled in transit can still arrive in worse condition than a well-handled Grade B — grade and shipping condition are related but separate questions.
